Capricorn Goat Brie is an artisan surface-ripened white mould cheese crafted by Woodside Cheese Wrights in the Adelaide Hills, South Australia. Made from 100% South Australian goat's milk, this cheese offers a fine texture and subtle, complex flavour that is both creamy and mild, with a clean, soft palate and a delicate finish.

When young (approximately two weeks old), Capricorn Goat Brie is slightly firm with a mild finish. As it matures (around four weeks from the make date), it becomes fully ripe and creamy inside, developing more complex flavours and an oozy interior. For an indulgent experience, allow the cheese to further ripen, then cut off the top of the wheel and scoop out the luscious, runny interior onto fresh bread.
